My Genius Solution to Melting Popsicles...

I LOVE POPSICLES! I hate the ooey, gooey, icky, sticky popsicle mess. So to combat the nastiness that is a melted popsicle I got a little creative and invented:

The Amazing

"Melting Popsicle, Dripping Collector, Thing-a-ma-jiggy"

Okay, okay so it's really just a plastic cup that I cut in half, with a slit on the bottom to put the popsicle stick through....but isn't it GENIUS?!

I had to pat myself on the back after that one.

I've been hiding something...

Confession time....

I've been hiding something lately. It's probably not what you think, actually I'm certain it's not what you think. You'll probably be shocked when you find out and quite frankly I can't believe I'm even telling you all this but it's time to tell the world. The truth is...

...

...

...

I've been hiding Swiss Rolls in my cupboard!

There I said it. I'm so ashamed.

I'm not sure how it started; I've never even really liked sweets. I went for years and years without ever even eating my own birthday cake (or anyone else's). I just don't LOVE chocolate, or cake, or sweets or donuts or anything of the sort. So how did I ever develop this crazy addiction to Swiss Cake Rolls? So much so that I've been buying boxes and HIDING THEM from everyone!! I eat one for breakfast, then again for a midday snack and I've been known to have one before bedtime if it's been a really stressful day.

WHAT IS WRONG WITH MEEEEE??????

This all started since I've had Aidan, so just in the last 6 months and the Swiss Cake Roll thing really only started in the last 3 months. One day back in January I was at the grocery store and I saw a box of them and thought..yummmm. So I bought them, brought them home, ate one, put the rest in the cupboard and a couple of days later when I went to get another one THEY WERE ALL GONE!! I guess the kids must've found them. I was so heart broken over the loss of my little swiss rolls that I vowed to never put them in the cupboard again and that's when I started hiding them. BUT SOMEHOW hiding them meant I had an all access pass to eat however many I wanted, whenever I wanted....and so the addiction grew.

So did my behind and my post pregnancy belly.

The fact is I was skinnier IMMEDIATELY AFTER I had the baby then I am 6 months later!! I naturally have a small framed body and this new weight is just not okay on me. Add to that the fact that I'm approaching 30 and my body just doesn't seem to want to cooperate like it used to. AARGH. I really shouldn't be complaining but still.

THIS HAS TO STOP! 15 pounds heavier than my pre-baby weight!! OUCH! That hurts just saying it....

I need to get my behind to the gym but that is so hard with 6 kids, 3 of whom are still home with me everyday. No room for a treadmill or any other exercise equipment in this house. I'm really at a loss here.

All I know is those little chocolate-y, creamy, ooey gooey yummy Swiss Cake Rolls are ruining my body.

DARN YOU LITTLE DEBBIE!!!!!!!!!!!!!

Because EVERY ingredient is important....

I think I have pretty good kids. They are very talented, they are good students, they are obedient, they actually like going to church, (although Liam isn't great at actually sitting down during sacrament meeting) and compared to the kids I see on Super Nanny, I think I've got pretty good control.

But, let's be honest....sometimes my kids don't like each other. Sometimes they fight. Sometimes I can't sit #2 next to #3 because he will incessantly pick on her, stare at her, poke her, get agitated with her for chewing her food to many times....no, #2 and #3 are NOT a good mix. #3 likes to take things out on #4 because #4 is littler, BUT, #4 doesn't fall far behind because she is very bossy. #5 is a prankster and then there is #1 who thinks she is the parent about 75% of the time and likes to dole out the discipline whenever she sees fit. #6 just cries a lot because he's a baby. Sometimes our house is noisy...who am I kidding?! My house is ALWAYS noisy.

You could say our house can get a bit chaotic. Trying to hold family home evening "in spite of the bedlam that sometimes reigns in a houseful of little bedlamites" (Jeffrey R. Holland) is a difficult task. This week we tried to focus on building more unity in our family and reminding the kids how important we REALLY are to eachother. Each person is special and adds special gifts to our family. The J & A Bowles family wouldn't be the same without each and every one of us. However, I couldn't just TELL them this, that would never work, I needed to SHOW them.

So we made some rainbow cupcakes!

First we gathered together in the dining room and pointed out all the ingredients. Each ingredient is good by itself but unless they are mixed together they can't be called Rainbow Cupcakes. Right? No one ingredient is more important than the other...they all work together to make the cupcakes.

Then we attempted to take some blurry cell phone pictures:

Next, each person was given an ingredient to put in the mix. We also let the kids take turns mixing it all up in the bowl and then we took more blurry cell phone pics. (I think we need a camera....)

When the cake mix was good and ready it was time to separate the batter into 6 cups (representing each kid). Each of our children chose a color of food coloring to put in their cup and then had fun mixing it altogether to make the batter their desired color.

The next step was to add a little bit of batter to each cupcake liner, layering color upon color to achieve the rainbow effect.

It was finally time to place our cupcakes in the oven. We made sure to take this opportunity to talk about how each of us were a different piece of the Bowles Family rainbow. Our cupcakes were each going to be wonderful and unique because each of us added something to the mix.

At last it was time to EAT our beautiful rainbow cupcakes! Sadly, after all that waiting Liam fell asleep for the night. Still, they were so yummy, so colorful and the kids loved the idea that they made them together. The most important lesson was that EVERY ingredient is important, just like in our family.

J-E-LL-O!

Groceries cost a lot. In a big family like ours groceries cost A LOT, A LOT. We rarely have fun store bought snacks in our house because of this. Sadly, I'm not really the type to bake cookies all day, every day and have them ready for after school snacks. I've tried but it's just not me.

Somedays it feels like my kids are eating me out of house and home. They are constantly eating, snacking, wanting more, snacking, eating, eating, eating. HOLY COW! And if you've seen my skinny little bean pole children you have to wonder, WHERE DO THEY PUT IT ALL. Likewise, if you've seen my skinny little bean pole children full of energy you know that it all gets burned off in 4.3 seconds.

I've had to be creative and come up with snacks that are quick, easy, COST EFFECTIVE and don't require me to be in the kitchen longer then I have to be. I thought I'd share one of our favorites after school snacks...

"Home Made" Jello Cups. The only real thing home made about this is that I make them at home. I make them all the time and we have a never ending supply of Jello because when 5 get eaten I make 5 more.

The first thing you'll have to do is purchase some reusable Gladware mini cups like these (or something similar). The size I use are the 4oz or 1/2 cup, they run around $3.50 for 8 of them. I use them so much it's well worth the price.

Line your cups up on the counter.

Get some boxes of Jello. In any flavor. You'll use 3 boxes for 15 cups.

Make Jello according to the package. I use a big soup ladle to portion it out into the individual servings. That might seem like a big fat DUH, but when I first started doing it I used to try to pour it in each cup straight from the little pot. BIG MESS! For this batch we did grape, watermelon and peach flavor. I put peach pieces in the peach flavored Jello for added variety. :)

Store in Fridge. The same thing could be done with pudding.

Doing it this way saves me a TON of money. The way I figure it a 6 pack of refrigerated Jello Cups costs around $2.79 before tax. That means that each cup costs around .46 cents + tax. I buy a regular sized box of Jello for .70 cents. (or .58 cents if I get the Walmart Great Value brand) I can get about 5 serving from each box, which makes each cup roughly .11 to .14 cents and NO TAX.

It works for us!

Oh and before I go....
I saw
this snack today from Our Best Bites on Make it and Love It. I'm trying it out today!!!

Most days are filled with cereal for breakfast or eggs if I get a little ambitious. Lunch varies between Left Overs, Sandwiches or Mac n' Cheese. For dinner I usually get fancy with casseroles and pasta. mmmmm yummy. I'm a culinary genius. It's funny that today happened to be the FOOD day for my blogging challenge because I actually ate something worth blogging about!! Whoomp there it is!!

I present to you my lunch:

Exhibit #1: Arroz con Gandules, aka Rice with Pigeon Peas, aka Yummy Puerto Rican food

Exhibit 2: My Dinner. A whole bunch of seafood-y, sushi stuff from Kyoto Restaurant here in Pittsburg. I was in an "Andrew Zimmern" mood and decided to try a whole bunch of Bizarre Foods. I know. I'm amazing.

Grilled Peanut Butter & Banana Sandwiches

So much to blog about...so, so much...first Elise participated in the Miss Sweet Six Pageant (a long standing Olathe Old Settlers tradition open only to little girls 6 years old) ...then there was the Old Settlers Parade...Opening Day for cheerleading for both girls...etc, etc....really, I have like 5 new blogs waiting in my drafts...
BUT

Today while in Memphis, TN, I had the most amazing Grilled Peanut Butter and Banana sandwich at the Rockabilly Diner just across the street from Graceland (you know where Elvis lived and now rests in peace...as much as you can with over 2,000 visitors each day) So while I know that the other topics require some much needed blog attention today's sandwich was too, too yummy to not get a whole blog of it's own. So now I give you....

30 Meals...

I am NOT, I repeat NOT a good cook...or even a fair to midland cook...okay maybe that's going to far but seriously I just don't have the cooking gene. My family does eat, they aren't withering away but I am just not good at coming up with food on the spot and in a pinch. Dinner time is NO FUN for me. I want to enjoy it but with so many other distractions (like, ummmm, 5 kids for instance) I find it very difficult.

Today, I stumbled upon Kathryn & Melissa's blog called NANNYGOAT, which is seriously an awesome blog with tons of great ideas.

Last week they posted this little gem of an idea:
The 30 Meals Plan

Isn't that great! Along with that they also made this cute little recipe box to hang on their fridge. I.MUST.HAVE.IT (supposedly a tutorial is coming soon)

I am totally excited to start trying new things and building my 30 meals, so that I don't have to stress at dinner time anymore. I only have one dumb question...if one of those meals includes your basic everyday spaghetti and meatballs do I really have to have a recipe card for that?! Maybe I will just write SPAGHETTI & MEATBALLS on an index card really big and only revert to that in times of true necessity.

P.S. As an added bonus if you are excited about the "30 Meals Project" head over to my friend Jackie's Blog at "The Combs Kitchen" where she has great recipe & menu planning ideas.

She LOVES my Quesadillas....

This afternoon Elise said, "I really wanted TACO BELL for lunch today....but it's okay because "MOMMY-BELL" is better anyway!"
